I made kale chips on Saturday. I would recommend sprinkling them with either soy sauce or cider vinegar before baking. I just used cooking spray and salt and they were still good. I may make Cajun kale chips soon since I still have a giant bag of the stuff in the fridge from St. Patty's Day.
Unfortunately I spent my early Easter Sunday morning puking up said kale chips at 4:00 AM. So maybe Leroy the tortoise will have to eat the kale instead.
We spent yesterday morning cursing the fact that almost everything is closed on Easter (neither of us even realized that it was Easter yesterday) and ultimately couldn't find heavy cream anywhere so no flourless chocolate cake for me.
We went to my parents' house yesterday afternoon. My brother's clan was there and they brought their Wii. Hilarity ensued. Puppy was worn out. Chinchilla was pissed off. And my niece stole my Gatorade.
I hardly ate anything yesterday. That's not good.

Fix me
I officially ran out of gas last night. I went to bed at 6:45. I never heard back from HCMC yesterday on what the heck I'm supposed to do now.
I am a zombie today.
My breakfast leaked all over my bag today despite being sealed in Gladware and wrapped in a plastic bag. My planner smells like honey, vanilla, and almond.
My brain is mush. My innards are broken glass. I want to go back to bed.

Don't know what to think
I got the results of my H. pylori test back today. It was negative.
This is……. Not good news?
H. pylori would be easy to fix. Take the two antibiotics, be miserably horribly sick for two weeks, and then go about my life.
Now? I don't know. Given my symptoms, H. pylori appears to be the lesser of the evils. Now I'm just waiting for a phone call from someone to tell me what to do next. I have a feeling they're going to suggest an endoscopy, which scares me because the last time I had one of those I woke up in the middle of the procedure and freaked out.
I'm starting to question myself. I was always accused by my parents of making up illnesses when I was growing up and that self-doubt still lingers. Yeah right, I love paying huge medical bills. :(
So right now I still can't eat without pain, can't really walk all that well, can't skate at all. I'm cranky and miserable and taking it out on everyone around me. So I feel guilty too, which makes me feel worse.

Foodblogging: PETA's Mock 'Corned Beef' and Cabbage
I made this last night so I could have a reuben sandwich with my husband. He got the leftover cow corned beef that I made for him on Monday.
[I would have a sexy picture here but anytime I take a picture of my food it always ends up looking like dog food. I'm working on that.]
The dish was very good, but I think it could have benefited from the addition of some pickling spices at the beginning. Alas, I didn't have any and I was too lazy to put together my own picking cocktail.
The seitan was sliced and put on marble rye with the tiniest schmear of mayo, thousand island dressing, well-rinsed kraut, and Swiss cheese. The remaining cabbage/carrot/onion mixture was served on the side. There should have been a pickle spear as well, but pickles last approximately 3.8 seconds in our house so we never have any.

I wasn't very impressed with the gravy so I doctored it up with more mustard, more horseradish, more white wine vinegar, more salt and pepper, and a splash of cider vinegar. The cider vinegar was key and added some sorely-needed sourness. One could also add about a quarter cup of Murphy's Stout too, if one were so inclined.
Mock 'Corned Beef' and Cabbage

1/2 Tbsp. canola oil
1 large onion, cut into wedges
1/2 medium head of cabbage
5 carrots, shredded
3 cups vegetable broth
1 Tbsp. English-style hot mustard
1/2 tsp. mild horseradish
1 Tbsp. white wine vinegar
8 oz. prepared seitan, sliced
1/2 tsp. salt
1/4 tsp. pepper
2 1/2 Tbsp. whole wheat flour
1/3 cup water
2 Tbsp. fresh parsley, chopped
Preheat the oven to 200 F.
Heat the oil in a soup pot over medium heat. Saute the onions until soft, then add the cabbage, carrots, 1 cup of the vegetable broth, mustard, horseradish, and vinegar and simmer, covered, for 10 minutes.
Add the seitan, salt, and pepper and simmer, covered, until the vegetables are tender, about 15 minutes. Remove the vegetables and seitan to a serving dish with a slotted spoon and keep them warm in the oven.
Mix the flour with the water, add to the pot with 2 cups of the broth (add more water if necessary), and simmer for 5 minutes, stirring occasionally. Pour the gravy over the cabbage mixture in the serving dish. Garnish with the parsley and serve.
Makes 4 servings.

I've got blogs all over the damn place so I've decided to consolidate here. Eventually when GoDaddy releases its grip on pikapikachick.com that will point here too. Phew, that will make things so much easier.
So…. In-Between Girl. Yeah. That pretty much sums up my life in the broadest sense. I've had this domain forever but I haven't done anything with it until now. What better way to make a fresh start than to change your blog name? PikaPikaChick's Sparkly Happy Fun Page of Doom is still hanging around for the moment but I haven't decided what I'm going to do with that. I'll probably just delete the whole thing.
This blog here on Blogger has been around since 2002. I was looking back at some of my old entries yesterday and decided that 1) I'm a very strange individual, and 2) I'm not going to delete them (yet). It's entertaining to see where I was six years ago. My, how things have changed.
Upcoming posts will be a random assortment of comics, foodblogging, everyday life journals, tidbits about ayurveda, maybe some photos and (gasp) videos (if I can find the AC adapter for our camcorder).
Onward, ho.

What better way to make a fresh start than to change your blog name?
